Ingredients

  • 4 ripe nectarines
  • 2 ripe bananas
  • 2 sweet eating apples
  • 1 punnet of
    redcurrants or blackcurrants
    (or both)
  • 2 ripe peaches
  • 1 Tbsp sunflower oil,
    just enough to coat all the fruit
  • 1 Tbsp maple syrup to
    coat the fruit
  • 3-4 star anise
  • A dash of cinnamon

    Here is a new one! We readily roast vegetables. Sometimes, we even fry bananas. But I had never thought of roasting fruit until I came across this idea in a recipe book recently. The trick is to cover your fruit with just enough oil to allow them to heat through properly while in the oven. This releases their natural sugars, making for a super sweet and delicious fresh fruit summer dessert – without added sugar!

    Roasted Fruit Salad

    Method

  • Preheat your oven to 200C.
  • Thoroughly wash and fry the fruit.
  • Cut them up into bite size chunks, taking out any pips or stones.
  • Mix them together carefully in a bowl, add some oil and maple syrup and tossing them to make sure they are well covered.
  • Add star anise and a dash of cinnamon.
  • Now, place them on a baking tray lined with parchment paper.
  • Roast in the oven for 20 minutes or until you see them soften.
  • Enjoy hot or cold (with a little vanilla ice cream on the side.)
