I love Tacos. They are easy to eat with children, are filling, nutritious and tasty all in one. You can also make these ahead of time as a school or work lunch. Play around with ingredients, you can even leave the meat out and make it vegetarian.
Use the usual wheat flour tortillas if you prefer those, they will be more like burritos then but easier to eat. However, using traditional corn taco shells makes this more authentic.
Method
- Chop the onion finely and together with the meat fry in a pan over medium heat, making sure it comes apart nicely.
- Meanwhile, finely chop the celery and tomatoes (ensure you take out all the seeds and watery pulp around it and discard it).
- Add the kidney beans, tomatoes and celery to the pan, stir it all in and keep frying.
- Season with the harissa paste, salt and pepper.
- Fill the taco shells, add coriander and enjoy!
- Tip: if you’re eating this straight away, heat up the taco shells in the oven first.
