  • 1 large punnet of strawberries, washed and beheaded
  • 4 Tbsp quark or low fat cream cheese
  • 200g coconut yoghurt
  • 6 fresh mint leaves, chopped
  • 1 vanilla pod

    Strawberries are in season all summer long, they’re fresh and naturally rich in iron, copper, magnesium and Vitamin B6, K and E. All essential nutrients we need for daily living. They are also low in calories and have a high water content. Coconut cream is rich in medium chain fatty acids, which are a great source of energy. Cream cheese contains lots of calcium, and I chose low fat variety here as you are getting lots of beneficial fats from the coconut cream. Enjoy this summery dessert or mid afternoon snack!

    Fresh Strawberries with Coconut Cream

    Method

    • Quarter the washed strawberries.
    • Place into 2 dessert dishes.
    • Add the quark/cream cheese and coconut yoghurt into a mixing bowl, slice the vanilla pod lengthways and scrape out all the flesh.
    • Add it to the cream and mix everything well until it comes together.
    • When you’re ready to serve, place the cream over the strawberries, sprinkle with the mint leaves and enjoy!
