Ingredients

Ingredients for
the Thai Sauce:

  • 1 inch piece
    fresh ginger, peeled
  • 2 garlic cloves
  • 1 chili pepper,
    deseeded
  • 1 Tbsp dark
    brown sugar
  • 1 Tbsp soy sauce
  • Juice of ¼-½ lime
  • A handful of cashew nuts

For the Salad:

  • A mix do fresh
    crunchy green leaves
  • Bamboo shoots
  • Mung bean shoots
  • A punnet of cherry
    tomatoes, halved
  • 1 red bell pepper,
    chopped into bite size pieces
  • A handful of freshly
    cut coriander

    Grate the ginger into a small bowl, squeeze the garlic into it, finely chop the deseeded chili pepper. Next, add the cashews, dark brown sugar, soy sauce, a little lime juice, mix it all up, add salt and pepper to taste. Next, place the salad ingredients into a large salad bowl, dress the sauce and sprinkle over coriander. Enjoy!
