Ingredients

  • 1 red onion or shallot
  • 2 stalks organic celery
  • 2 large carrots
  • 1 medium floury potato
  • 1 courgette
  • 1/3 bag of frozen petit pois (peas)
  • Dash of olive oil
  • Dr Coy’s vegetable stock & 1.5l water
  • Some thyme, salt
    and pepper to season

    Vegetable soup recipe

     

    Method

        • Cut up the onion and start sweating in some olive oil. Cut up celery and add to this. Add a dash of water to avoid overheating.
        • Finely slice the carrots and add. Keep sweating until you see the onions softening.
        • Finally add diced potato, courgette, and peas. Add 1-litre vegetable stock and thyme. Cover and boil on medium heat for 15 minutes. Use a mixing stick to whisk up. Add more water if you like.
