- Cut up the onion and start sweating in some olive oil. Cut up celery and add to this. Add a dash of water to avoid overheating.
- Finely slice the carrots and add. Keep sweating until you see the onions softening.
- Finally add diced potato, courgette, and peas. Add 1-litre vegetable stock and thyme. Cover and boil on medium heat for 15 minutes. Use a mixing stick to whisk up. Add more water if you like.
