Ingredients

  • 750ml hazelnut milk
  • 120ml Maple Syrup
  • A pinch of salt
  • ¼ cup water
  • A handful of roasted
    hazelnuts, roughly chopped

    Catering for Christmas parties or family reunions is a tall order at the best of times. These days, individual dietary requirements can make cooking a meal for many people seem impossible. Many foods can be made gluten free or dairy free simply by swopping out one ingredient. Shops also stock handy alternatives these days. However, if you still want to make tasty food yourself, here is a delicious alternative ice cream dessert recipe.

    Method

  • Place the hazelnut milk and maple syrup along with a pinch of salt into a blender.
  • Blend a high speed for a short while. Transfer the liquid into an oven proof dish such as loaf tin, and freeze overnight.
  • Ideally, take out of the freezer every 30 minutes for the first couple of hours to stir the freezing liquid gently.
  • Allow to sit at room temperature for a few minutes before serving. Serve with a drizzle of hazelnut pieces.

    Note: If you want to make the hazelnut milk yourself, soak 800g roasted hazelnuts in 1l water overnight in the fridge. Take out the next morning and blend well in a food processor at high speed.
    Pass through a strainer and muslin cloth to strain. Discard the hazelnuts and use the milk.
