Ingredients

  • 2 large ripe tomatoes
  • 1 ripe avocado
  • 300g block of firm tofu
  • ½ tsp ground turmeric
    (flavour and yellow colour of
    the no-egg tofu scramble)
  • Olive oil for frying
  • Salt & pepper to season
  • Two handfuls baby
    spinach leaves
  • A couple of slices of
    freshly toasted sourdough bread

      Tofu is a highly versatile food. It is made from fermented soy beans and high in protein, which makes it a great vegan high protein food. This meal is a vegan twist on the traditional scrambled eggs on toast. It works great as breakfast and as a high protein post workout meal. You can add mushrooms and baked beans for a full-on vegan Irish breakfast experience.

      Method

      • Slice each tomato in half, season with salt and pepper, and put them under a hot grill until they start to soften and are nearly ready to burn.
      • Meanwhile, cut up the tofu and allow excess water to drain off. Mash the tofu with a fork until a scramble-like texture is achieved.
      • Season with salt and pepper, and mix the turmeric well into the mixture. Add olive oil in a pan and start frying the tofu over a gentle heat, immediately adding the spinach and stirring it in well.
      • Allow the spinach to wilt and the tofu to heat right through. Half, destone and slice the avocado.
      • Now it’s time to serve on sourdough toast with the grilled tomatoes & avocado. Enjoy!
