Ingredients

  • 100g almonds, roughly chopped
  • 300g oats
  • 50g runny honey
  • 100g almond butter or peanut butter
  • 2 Tablespoons melted coconut oil
  • A handful of either: raisins,
    goji berries, dried cranberries,
    chocolate chips, peanuts, etc

    Method

    • In a medium-size mixing bowl, place all the dry ingredients. In a pan, gently warm honey, almond butter and coconut oil.
    • Next, pour it into the mixing bowl and mix everything really well.
    • Now, transfer the mixture into an 8×8 in baking tray lined with parchment paper, and flatten to about 1 in thick. Cover and place in the fridge overnight.
    • Cut into 16 equal squares (or whatever size you fancy) and store for up to 5 days in the fridge. Can be eaten straight out of the fridge or at room temperature.
