The difference between freshly cooked oats and overnight oats is their nutritional content. You are achieving the same, making oats fully digestible. But you are not putting the heat of cooking into the oats, which destroys some valuable nutrients. They’re also creamy and delicious. The only thing you have to do is remember to set up the oats the night before.

    Overnight Oats with Fruit Compote

    Method

    • In the evening, set aside the oats and water/milk in a bowl and cover. Can be stored either in the fridge or on the countertop.
    • Also in the evening, take the berries and bring them to a gentle boil, then simmer for 3-4 minutes or until they start to fall apart.
    • Add sugar or honey. Set aside.
    • In the morning, stir the porridge and place it in two breakfast bowls, and add the cooled compote.
    • Tip: You can vary this recipe by adding half a chopped banana, some cocoa nibs, fresh berries or chopped mint leaves if you’re adventurous
