Salmon and Veg bake is the perfect easy dinner meal.
- Preheat your oven to 220C. Thinly slice the leeks, put them into an oven dish along with the peas and cream.
- Mix it all up and season with salt and a generous bit of freshly grated pepper.
- Next, place the salmon on top and drizzle with a little olive oil, some lemon juice and the herbs of your choice. Cover with tin foil and bake for 20mins, checking regularly.
- Serve with steamed new potatoes, cooked quinoa or wild rice.
