    Method

    • If you have a food processor, throw in the fennel, apple and celery and blend briefly.
    • If you don’t have a food processor, chop everything finely.
    • Next, finely cut the lettuce and rocket.
    • Throw everything into a bowl and eat immediately.
    • If you fancy dressing, add some vinegar and oil.
