Ingredients

  • 1 large cucumber
  • 1 head of celery
  • 1 medium melon
    (honeydew or
    cantaloupe both work well)

For The Dressing

  • Juice of 1 lemon
  • About 3-4 Tbsp olive oil
  • A small handful each of
    chopped mint and coriander leaves

    Method

    • Thinly slice the cucumber and celery, you can use a mandolin if you have one.
    • Cut the melon into halves, take out the pips, cut off the peel and cut the flesh into bite-size chunks.
    • Mix in a decorative salad bowl together with the chopped green leaves.
    • Mix the lemon juice and olive oil to create the dressing. Serve cooled.
