The bbq season hasn’t quite arrived yet. But if you are feeling like you want to start enjoying fresh summer salads now, this is the place to start. Cucumbers and celery are high in water and electrolytes, melon contains large amounts of calcium, and mint and fennel will aid digestion. This is a perfect light salad for people wanting to watch their weight or who are struggling with bloating.
Method
- Thinly slice the cucumber and celery, you can use a mandolin if you have one.
- Cut the melon into halves, take out the pips, cut off the peel and cut the flesh into bite-size chunks.
- Mix in a decorative salad bowl together with the chopped green leaves.
- Mix the lemon juice and olive oil to create the dressing. Serve cooled.
