  • 1 large or 2 small
    fennel bulbs
  • Juice and zest
    of 1 organic lemon
  • A drizzle of olive oil
  • Freshly chopped
    coriander or flat leaf parsley
  • Salt & pepper to season

This salad is one for those times when you just want to eat, when you need to add more chew to your lunch or dinner, or even eat something tasty between meals. It’s full of sunshine vitamins, flavour and nutrition. It is very low on calories, yet gives you a lot of flavour and chew. Fennel is seasonal and a very good for your digestion, just the right thing after Christmas.

    Fennel Lemon Side Salad

    Method

    • Prepare the fennel by taking off the stalks and cutting it in half.
    • Remove any brown outer layer.
    • Finely slice/chop the fennel halves and place into a bowl.
    • Add some of the lemon juice, a drizzle of olive oil, parsley and salt and pepper to your taste. Enjoy!
