  • 250g smoked salmon
  • 125g silken tofu (the very soft tofu)
  • A dash of dairy-free milk alternative
  • 1⁄2 lemon, juiced
  • Salt and pepper to season
  • Freshly chopped herbs; dill or parsley

    I love this dairy-free alternative to a wonderfully tasty, nutritious and filling high-protein meal. Smoked salmon is full of brain-boosting Omega 3 fats and high-quality proteins. Enjoy this on a slice of toast for a balanced post-workout snack or light evening meal (or for a tasty dinner starter).

    Tip: You can use smoked mackerel instead of salmon, just remember to use quantity 2:1 of salmon to tofu.

     

    Method

    • Throw everything (except the milk) together into a blender and blend until smooth. Add a dash of milk to help
      create a creamy consistency. Ready to serve!
