  • 5-6 Tbsp olive oil
  • 1 lemon (juice and zest)
  • 1 large Tbsp
    Dijon mustard
  • 1-2 Tbsp good
    quality white wine vinegar
  • Salt & pepper to season

      BBQ season is starting, and with that the need for a decent homemade mayonnaise that doesn’t drown everything in standard bland flavour. This dressing is light and combines delicate flavours to come together to a great alternative egg-free mayonnaise. It works great in salads, sandwiches, homemade coleslaw, or with fish and shellfish. Make it ahead and keep it in the fridge for a few days.

       

      Method

      • Mix all wet ingredients together in a small sealable jar and shake vigorously.
      • Season with salt & pepper.
      • Ready to serve! Keep in the fridge.
