Ingredients

For the skewers:

  • 2 medium chicken fillets or
    a medium pack chicken fillet pieces
  • ½ pineapple cut into large
    v bite size chunks
  • a dash of olive oil
  • 4 wooden skewers
  • For the marinade:

  • ½ can coconut milk
  • 100ml pineapple juice or the
    juiced centre core of the pineapple
  • 1 lime juiced
  • 3 Tbsp dark muscovado sugar
  • 3 Tbsp soy sauce
  • a dash of cayenne pepper
  • 2 crushed garlic cloves
  • spices (cumin, ginger, paprika).

      Back home we love combining the sweet taste of pineapple with savoury dishes because it’s a wonderful tropical combination of tastes. This is a Hawaiian take on this flavour. Pineapple is a fruit, so you wouldn’t necessarily think about adding it to a main dish, but it’s a perfect fruit to eat with a main as it contain large amounts of digestive enzymes which help your body digest the food you are eating and thus help you absorb more from your meal.

      Hawaiian Chicken Skewers

      Method

      Cut the chicken breasts into bite size chunks that will go well on the skewers.

      • Mix all marinade ingredients together, keep a little aside that you can use during grilling later.
      • Put the chicken into it making sure it’s well covered all over. Cover.
      • Place into the fridge for at least 3 hours or even overnight.
      • When you are ready to use the chicken, take it out of the marinade and put the chicken onto the skewers, alternating with the pineapple pieces.
      • Turn the grill on at 230C, place chicken skewers onto a grill tray and grill until golden brown, turning occasionally, and adding a little of the leftover marinade towards the end.
      • Serve with a lovely green side salad and a bowl of rice.
