Method
- Drain and pat the tofu dry using a kitchen towel or paper towel.
- Place the tofu, honey, lemon juice, and coconut milk into a blender.
- Blend on high speed until everything is smooth and well combined.
- Divide the mixture into 4 serving glasses or bowls.
- Refrigerate for 2–4 hours to allow the pudding to set.
- Top with fresh raspberries, crushed almonds, grated lemon zest, and mint leaves before serving. Enjoy!
