Ingredients

  • 1 block of silken tofu, drained and dried using a kitchen towel or paper towel
  • Juice of 2 lemons
  • 3-4 Tbsp runny good quality honey
  • 1 can of thick coconut milk
  • Some grated lemon zest for serving
  • A few fresh mint leaves for serving
  • 1 punnet of fresh raspberries for serving
  • 3 Tbsp coarsely crushed almonds for serving

    Well, it may be time to start thinking about going on a diet, but these little pleasures can be enjoyed to the full. Here, silken tofu adds a creamy texture, and honey gently balances with zesty lemon, to create a delicious dessert. It’s also incredibly easy to make.

    Method

    • Drain and pat the tofu dry using a kitchen towel or paper towel.
    • Place the tofu, honey, lemon juice, and coconut milk into a blender.
    • Blend on high speed until everything is smooth and well combined.
    • Divide the mixture into 4 serving glasses or bowls.
    • Refrigerate for 2–4 hours to allow the pudding to set.
    • Top with fresh raspberries, crushed almonds, grated lemon zest, and mint leaves before serving. Enjoy!
