While we are settling back into a more normal and healthier eating routine, we will invariably be overcome with cravings at times. I always keep carrots, cucumber, celery and peppers in the fridge to make into veg sticks to feed the cravings. At the start of this, you may not feel like eating veg sticks instead of chocolate (who would?), but you will start to feed a new healthy habit very quickly. Veg sticks can make a great snack, lunch or post dinner TV snack. You can make your own dips, or simply buy at the shop. Remember to keep it simple.
Method
- Wash and peel/prepare carrots, celery, cucumber, peppers, mangetout or asparagus and cut into handy sticks (I like mine about 3 inches long).
- Combine the cream cheese, tomato puree and Italian herbs in a bowl, finely cut the sundried tomatoes and basil leaves, mix everything and season to taste.
- Prepare the avocado by smashing up the flesh with a fork, add the cream cheese and lemon juice. Finely chop and add the tomatoes, peel and crush the garlic into the mousse. Season to taste with salt & pepper.
