When you’re trying to eat well and look after your gut health you can be tempted to not enjoy your food. There is no reason you shouldn’t have your usual tasty treats, albeit adapted to suit your current diet. Loaded nachos are a wonderful idea, but they always end up killed with too much cheese in my opinion. Here is a veggie loaded nachos recipe, with a little added cheese too. Loaded nachos are a great share meal, so this one it brilliant for bbq’s with friends, in front of a good movie, or simply enjoyed as part of a main meal.
Method
- Preheat your oven to 200C fan.
- Mix the squash with olive oil and chili pepper and pour onto a lined baking tray.
- Mix the drained black beans and add the spices and maple syrup. Spread out on a lined baking tray.
- Put both in the oven and bake until the squash is soft, and the black beans start to firm up a little, about 10 minutes for beans and 20 minutes for the squash.
- To make the nachos, spread the tortilla chips on a deep oven proof dish, generously spread the squash over it and the black beans.
- Add a reasonable amount of grated cheese, not too much, and heat up int the oven for about 5-10 minutes or until the cheese is starting to melt.
- To serve, sprinkle some guacamole, salsa and spring onions, and serve with a side of sour cream. Enjoy!
