Here is a quick and tasty vegetarian/vegan version of a more traditional chicken skewer you can easily produce at a family bbq without too much hassle. Use firm, non-silken tofu here as it has a more meat-like consistency that is easily pierced onto a skewer. Tofu is a traditional form of plant based protein, it is made from fermented soy beans and a very versatile food to cook with.
Method
- Prep all the vegetables.
- Make sure to drain away all liquid from the tofu before you use it.
- In a bowl, mix all the marinade ingredients together, then add the tofu and swirl it around making sure to cover the tofu well.
- Take another bowl and add the vegetables along with a drizzle of olive oil, salt and pepper.
- Make sure they’re coated well.
- Now, take 6 skewers and start adding two pieces of vegetable for each piece of tofu.
- When you’re done, drain the remainder of the marinade over the skewers. Grill over an open fire or under the grill in the oven.
- Serve with good quality bbq sauce. Enjoy!
