Ingredients

  • 1 block of firm, non-silken tofu,
    cut into bite size chunks
  • 1 red pepper, washed and
    cut into chunks
  • 1 courgette, washed and
    cut into bite size chunks
  • 10 small button mushrooms, halved
  • 1 red onion, peeled and quartered
  • For the marinade: 3 Tbsp olive oil,
    2 tsp ground cumin, ½ tsp smoked paprika, ½ tsp garlic powder,
    a dash of cayenne, ¼ tsp dried chili flakes, ½ tsp dried
    ginger, salt and pepper
  • To grill: good quality
    barbeque sauce

      Here is a quick and tasty vegetarian/vegan version of a more traditional chicken skewer you can easily produce at a family bbq without too much hassle. Use firm, non-silken tofu here as it has a more meat-like consistency that is easily pierced onto a skewer. Tofu is a traditional form of plant based protein, it is made from fermented soy beans and a very versatile food to cook with.

      Method

      • Prep all the vegetables.
      • Make sure to drain away all liquid from the tofu before you use it.
      • In a bowl, mix all the marinade ingredients together, then add the tofu and swirl it around making sure to cover the tofu well.
      • Take another bowl and add the vegetables along with a drizzle of olive oil, salt and pepper.
      • Make sure they’re coated well.
      • Now, take 6 skewers and start adding two pieces of vegetable for each piece of tofu.
      • When you’re done, drain the remainder of the marinade over the skewers. Grill over an open fire or under the grill in the oven.
      • Serve with good quality bbq sauce. Enjoy!
