    Summer Beetroot Salad

    Method

    • Peel and cut the carrots and apples into small pieces.
    • Place beetroot, apples and carrots into a food processor or blender. Add the olive oil, coriander and mind.
    • Whisk everything until broken into small pieces and well mixed.
    • Add the toasted almonds and a few leftover coriander leaves to serve.
