Summer BBQ Roast Vegetables are easy to make and are great for barbequing!
- Wash all vegetables and prepare them for chopping.
- Chop all vegetables into bite-size chunks and mix them in a bowl.
- Next, cover with enough olive oil to just coat them, about 2-3 Tablespoons.
- Season with some salt and pepper.
Place it onto an aluminium roasting dish. Barbeque (or oven-bake) until they are evenly browned and have lost their initial chew.
