    Summer BBQ Roast Vegetables

    Method

    • Wash all vegetables and prepare them for chopping.
    • Chop all vegetables into bite-size chunks and mix them in a bowl.
    • Next, cover with enough olive oil to just coat them, about 2-3 Tablespoons.
    • Season with some salt and pepper.
    • Place it onto an aluminium roasting dish. Barbeque (or oven-bake) until they are evenly browned and have lost their initial chew.
