Spring Recipe Ideas with Irish Vegetables

We’re so used to simply walking into the supermarket and grabbing whatever vegetable we find on the shelf that takes our fancy. While that’s wonderful, and we encourage you to keep including the veggies you love in your daily meals, why not set yourself the challenge of eating more seasonal, locally produced vegetables?

Fresh homegrown Irish vegetables are in season in May. Since seasonal vegetables are picked when they’re just ready to eat and haven’t had to travel far to your plate, they’re naturally fresher and packed with more nutrients than produce grown out of season or imported from afar.

Vegetables in Season in May in Ireland – and How to Cook Them

Leeks – Boiled with Butter

Wash and slice the leeks finely. Boil a little fresh water, add the leeks and cook for 5 minutes or until tender. Use just enough water so it nearly boils off. Add butter toward the end and stir through.

Leeks – Pan-Fried with Garlic

Wash and slice the leeks. Sauté a chopped clove of garlic in olive oil over medium heat. Add the leeks and stir well. Cook for 4–5 minutes, stirring regularly until softened.

Spinach – Fresh Pasta, Tomatoes & Spinach

Sauté a chopped clove of garlic in olive oil. Add a large handful of spinach and allow it to wilt. Add halved cherry tomatoes and just under half a cup of boiling water, followed by fresh pasta. Cook for 2–3 minutes until pasta is soft and has absorbed the liquid. Season with salt, pepper, and a few fresh spinach leaves on top.

Spring Salad – Lettuce, Herbs, Scallions & Beetroot

Take a bag of fresh mixed leaves and place them in a large bowl. Finely chop fresh basil, parsley, and chives and mix through. Add chopped scallion greens and sliced white stalks. Grate half a fresh beetroot and carrot over the mix. Toss with the spring salad dressing below.

Fresh & Light Spring Salad Dressing

Mix the juice of a lemon with 1 tsp of fine sugar and about 3 Tbsp of olive or sunflower oil. Use immediately to dress your spring salad.
