Here is a new one! We readily roast vegetables. Sometimes, we even fry bananas. But I had never thought of roasting fruit until I came across this idea in a recipe book recently. The trick is to cover your fruit with just enough oil to allow them to heat through properly while in the oven. This releases their natural sugars, making for a super sweet and delicious fresh fruit summer dessert – without added sugar!

Ingredients
- 4 ripe nectarines
- 2 ripe bananas
- 2 sweet eating apples
- 1 punnet of
redcurrants or blackcurrants
(or both) - 2 ripe peaches
- 1 Tbsp sunflower oil,
just enough to coat all the fruit - 1 Tbsp maple syrup to
coat the fruit - 3-4 star anise
- A dash of cinnamon
