Ingredients
- 1 red onion or shallot
- 2 stalks organic celery
- 2 large carrots
- 1 medium floury potato
- 1 courgette
- 1/3 bag of frozen petit pois (peas)
- Dash of olive oil
- Dr Coy’s vegetable stock & 1.5l water
- Some thyme, salt and pepper to season
Method
Step 1
Cut up the onion and start sweating in some olive oil. Cut up celery and add to this. Add a dash of water to avoid overheating.
Step 2
Finely slice the carrots and add. Keep sweating until you see the onions softening.
Step 3
Finally add diced potato, courgette, and peas. Add 1 litre vegetable stock and thyme. Cover and boil on medium heat for 15 minutes. Use a mixing stick to whisk up. Add more water if you like.
