Ingredients
- 300g cooked beetroot
- 100g carrots
- 200g apples
- 10g olive oil
- 4 sprigs each of fresh coriander and mint
- 3 tablespoons of toasted flaked almonds
Method
Step 1
Peel and cut the carrots and apples into small pieces.
Step 2
Place beetroot, apples and carrots into a food processor or blender. Add the olive oil, coriander and mind.
Step 3
Whisk everything until broken into small pieces and well mixed.
Step 4
Add the toasted almonds and a few leftover coriander leaves to serve.
