Summer BBQ Sliced Courgette

  • 2 courgettes
  • 1-2 tablespoons olive oil
  • Salt and pepper for seasoning
  • Good quality balsamic vinegar to serve


Step 1

Wash the courgettes and cut off their ends.

Step 2

Slice the courgettes lengthwise into thin slices, about 0.5cm thick.

Step 3

Put them into a bowl and coat them with oil, and add some salt and/or pepper.

Step 4

Throw on the barbeque and brown on each side.

Step 5

Serve with a drizzle of good-quality balsamic vinegar.
