Summer BBQ Roast Vegetables

  • 1 courgette
  • 1 red pepper
  • 1 aubergine
  • 1 yellow pepper
  • Some olive oil to coat
  • Salt and pepper to season


Step 1

Wash all vegetables and prepare them for chopping.

Step 2

Chop all vegetables into bite-size chunks and mix them in a bowl.

Step 3

Next, cover with enough olive oil to just coat them, about 2-3 Tablespoons.

Step 4

Season with some salt and pepper.

Step 5

Place it onto an aluminium roasting dish. Barbeque (or oven-bake) until they are evenly browned and have lost their initial chew.
