Homemade Cranberry Sauce

  • 350g cranberries 
  • 60ml orange juice
  • 150ml good quality Irish Apple Cider 
  • 120ml maple syrup 
  • 30-40g coconut or dark brown sugar 
  • ¼ tsp ground cinnamon 
  • 1-2 dried Star Anise pods 
  • Some salt 


Step 1

In a pan, bring to the boil the orange juice, apple cider, maple syrup and sugar, stirring gently. 

Step 2

Once it’s boiling, add cinnamon, star anise and a little salt. 

Step 3

Now, add the cranberries and reduce the heat. Stirring gently, simmer this mixture until the cranberries start to soften and open up, about 10 mins. 

Step 4

Now is the time to gently break up the cranberries as much as you like. I use a fork or potato masher for this. Once your desired consistency has been achieved, bring it back to the boil briefly before you allow it to cool and thicken up in the open pan. Will keep in the fridge for 3 days.
