Hearty Salmon & Veg Bake

Ingredients

  • 2 leeks
  • 50g frozen peas
  • 30ml fresh cream 
  • 2 salmon darnes 
  • Juice of 1 lemon 
  • Fresh herbs, e.g. dill, tarragon or parsley 
  • 1 tbsp olive oil 

Method

Step 1

Preheat your oven to 220C. Thinly slice the leeks, put them into an oven dish along with the peas and cream.

Step 2

Mix it all up and season with salt and a generous bit of freshly grated pepper.

Step 3

Next, place the salmon on top and drizzle with a little olive oil, some lemon juice and the herbs of your choice. Cover with tin foil and bake for 20mins, checking regularly. 

Step 4

Serve with steamed new potatoes, cooked quinoa or wild rice.
