Grilled French Bean Salad

Ingredients
- One large cucumber, quartered and cut into 2cm pieces
- A little sugar
- Salt & freshly ground pepper
- French beans, ends trimmed
- Fresh spring onions (scallions), finely chopped
- Olive oil
- 1 tablespoon lemon juice and zest of ½ lemon
- Chopped fresh dill
Method
Step 1
Place the cucumber in a colander and sprinkle with sugar and 1 teaspoon salt. Let stand 15 minutes. Toss together green beans, scallions, and oil in a bowl.
Step 2
Season with salt and pepper. Grill in a grill basket over direct heat, tossing occasionally, until beans are charred and tender, for about 12 to 14 minutes.
Step 3
If you haven’t got your barbeque set up, simply grill them in the oven, turning occasionally.
Toss together cucumbers, green beans, lemon zest and juice, and dill in a bowl. Season with salt and pepper.
