Fresh Chicken Tagine

Ingredients

  • 150g couscous (or rice) 
  • 4 garlic cloves, peeled and sliced 
  • 250g cherry tomatoes
  • 250g green asparagus tips 
  • 2 heaping teaspoons of rose harissa 
  • 2 medium chicken fillets (or white fish)
  • 1 lemon
  • Some fresh natural yoghurt to serve 

Method

Step 1

Start with the couscous,  place it in a heat proof bowl, season with salt and pepper, cover with boiling water, cover and set aside. 

Step 2

Next, add the garlic and olive oil to a pan over medium heat. Add the cherry tomatoes. You can either cut them in half or add them whole. Stir well. Add the chopped asparagus tips, stir. Season with salt and pepper.

Step 3

Next, rub the harissa paste over the chicken breasts, place them on top of the vegetables, add 150ml water and a few squirts of lemon. Cover and cook for 15 mins or until the chicken is cooked through. 

Step 4

Serve with the couscous and some yoghurt on the side.
