Filling High Fibre Salad

  • A tin of chickpeas, drained
  • A large red onion
  • 3-5 tomatoes
  • 1 pack cubed feta
  • Rocket leaves
  • A red pepper
  • 1 yellow pepper


Step 1

Finely chop the peppers, onions and tomatoes.

Step 2

Cut up the rocket leaves.

Step 3

Cube the feta or crumb it between your fingers.

Step 4

Drain the chickpeas, if you like, you can give them a quick rinse as well. Throw everything into a bowl and mix.

Step 5

Drizzle with olive oil, and mix again.

Step 6

Season with salt & pepper.
