A large bag of any supermarket Stir Fry ready mix (allow ca 300g per person)
A packet of firm tofu
1 cup dry rice, cooked or 110g of egg noodles, cooked and drained
Soy sauce and some olive oil
Rinse the rice and place in a deep pan. Cover with double quantity water, bring to the boil, cover and reduce to a simmer. If using noodles, cook in the pan.
Meanwhile, cut the tofu into bite size chunks, heat up a little olive oil in a pan and add the tofu. On medium heat, gently fry the tofu on each side, tossing occasionally. Put the tofu aside and add the stir fry vegetable mix to the pan.
Stir Fry’s steam rather than fry, keep tossing and turning to ensure all vegetables are heated through. This will take no more than a few mins.
When the rice is ready to serve, simply add the tofu to the vegetables, give them a good toss. Serve with soy sauce.
