Ingredients

  • 2 Tbsp olive oil
  • 1 courgette
  • 1 medium onion
  • 1 small aubergine
    (or ½ large)
  • 1 red pepper
  • 1 tin of chopped
    tomatoes
  • To season: mixed
    mediterranean herbs, salt and
    pepper, a pinch of chili flakes

    Ratatouille is a mediterranean vegetable stew full of sun-drenched flavourful vegetables. The deep red colours provide you with protective antioxidants and vitamins. You can make this as a vegetarian option to replace standard Bolognese sauce. Ratatouille is also great with steamed rice, fresh baguette, or simply enjoyed on its own. Also great as leftover cold or hot lunch.

    Method

  • Chop up the vegetables into bite size chunks, I like them smaller rather than too large.
  • But traditionally, they are about 2-3cm chunks.
  • Heat the olive oil in a deep pan.
  • Add the onion and peppers, sweat them for a moment until they start to soften.
  • Add the courgette and aubergine.
  • Stir well to make sure they all get a chance to heat through.
  • Next, add the tinned tomatoes, herbs, salt and pepper and chili flakes to taste.
  • Simmer for 10-15 minutes, or until you achieve the desired consistency for vegetables.
