A classic Italian dish, it even features the colours of the Italian flag. So simple to prepare, this salad never fails to add flavour to any meal, or can be eaten as a stand alone meal. Mozzarella is quite high in fat, so make sure you balance this with lots of tomatoes and basil. This goes well on its own or served on freshly toasted sourdough bread. Rich in calcium and Vitamin D from the cheese, as well as oodles of vitamins from the tomatoes, enjoy this dish occasionally.
Method
- On a large serving plate, place the thinly sliced mozzarella.
- Top it with the halved tomatoes.
- Drizzle with a little (about 1-2 Tbsp) balsamic vinegar, salt and pepper.
- Sprinkle with plenty of basil leaves. Enjoy!
