  • 2 large potatoes per person
    (any fresh chipping potato is good)
  • Some olive oil for drizzling
  • Salt to season

    Method

      • Preheat the oven to 210C/200C Fan/Gas 6W
      • Wash the potatoes, and leave the skin on. Cut them lengthwise into quarters; you want to achieve a wedge about the size/thickness of your index and ring fingers put together.
      • In a bowl, mix the wedges with a little olive oil and salt. Make sure they are all thinly coated, as the oil on the potato will improve cooking.
      • Bake in the oven for 35-45 minutes or until they are crunchy and soft. These are great served with a salad, steak or a bean burger.
