Method
- First, whisk up the eggs and combine with the oil, vanilla and almond butter in a large mixing bowl.
- Stir in the rest of the ingredients. Feel free to pinch a couple of blueberries for a mid-bake snack.
- Fill up your cases with the batter and bake for 25 mins, until a skewer comes out squeaky clean. Leave to cool on a wire rack, then tuck in – or keep for tomorrow’s breakfast.
