  • Ice lolly moulds
  • ½ large or 1 small water
    melon
  • 5 heads of flowering
    elderflowers
  • Water and 2 Tbsp sugar
  • Juice of 1 lemon
  • ½ punnet of
    blackcurrants or redcurrants

    These lollies are a super healthy alternative to commercial varieties that are high in sugar. Watermelon is the perfect rehydrating fruit in the summer. Elderflower is in bloom in the summer, you can buy elderberry concentrate in the shops if you don’t fancy making your own here. This contains sugar, so go easy on the quantity when mixing.

    Method

  • Cut up the melon, blend it in a food processor to break up all the pieces.
  • Pass through a sieve to get rid of the seeds.
  • Pour into ice lolly moulds. Soak the elderflowers in freshly boiled hot water and 2 tablespoons sugar overnight.
  • In the morning, remove the elderflower heads, pass the cooled liquid through a strainer, add a dash of lemon juice.
  • Add the blackcurrants and pour into ice lolly moulds. Enjoy!
