I came across this salad one day when searching for the perfect springtime salad. Asparagus and strawberries are both in season now, so enjoy their combined taste in this wonderfully fresh and surprising dish. It’s super easy to prepare, too. Strawberries are rich in calcium, iron, potassium and magnesium. Asparagus has high levels of Vitamin C and folate.

Method
- Cut the asparagus tips into bite size pieces, fry them briefly in a medium pan in some olive oil.
- This should take about 3-4 minutes.
- Meanwhile, wash the strawberries, cut off the green tops and quarter them. Set aside.
- Roughly chop the walnuts and roast in a hot pan together with the pine nuts for no more than 3-4 minutes.
To make the dressing:
- in a blender, mix the balsamico, olive oil, salt, pepper and natural yoghurt as well as half the strawberries until you have a puree.
- Now, mix the strawberries, rocket, cooled asparagus tips, chopped feta and nuts together in a bowl and serve with the dressing. Irresistible!
