These canapes will easily win over your guests. They are tasty, healthy and easy to prepare. They don’t require cooking or gathering of complicated ingredients. Make ahead of time and stand in a cool room covered with cling wrap.
Here, I am offering a choice of light bites either on fresh baguette or on salad leaves, making this canape suitable for a variety of tastes and dietary requirements.
Method
Salmon on Brown Soda bread:
- butter the bread, place slices or salmon on each slice, season with pepper and a drizzle of lemon juice. Place on a serving platter to serve.
Mozzarella bites:
- Open the mozzarella and allow all the juice to drip off.
- Cut the cheese into bite size cubes. Slice the cherry tomatoes in half, take off roughly palm sized leaves of lettuce and wash them.
- Next dry them and place them on a serving dish.
- Place a sliced cherry tomato (both halves) and 2 mozarella cubes onto each leaf, drizzle with a little salt and pepper and decorate with a couple of basil leaves.
Feta-Olive sticks:
- Open the feta cheese and drain away any excess fluid.
- Cut into bite size chunks, ideally about the size of an olive.
- Using a tooth pick, prick first a small piece of sundried tomato, then an olive and finally a chunk of feta to allow the creation to stand on the feta.
- Make as many as you want to eat, and place into a decorative bowl to serve. Enjoy!
