Ingredients

  • A tin of chickpeas, drained
  • A large red onion
  • 3-5 tomatoes
  • 1 pack cubed feta
  • Rocket leaves
  • A red pepper
  • 1 yellow pepper

    Get your fill of fibre with our Filling High Fibre Salad!

    Method

    • Finely chop the peppers, onions and tomatoes.
    • Cut up the rocket leaves.
    • Cube the feta or crumb it between your fingers.
    • Drain the chickpeas, if you like, you can give them a quick rinse as well. Throw everything into a bowl and mix.
    • Drizzle with olive oil, and mix again.
    • Season with salt & pepper.
