Method
- Finely chop the peppers, onions and tomatoes.
- Cut up the rocket leaves.
- Cube the feta or crumb it between your fingers.
- Drain the chickpeas, if you like, you can give them a quick rinse as well. Throw everything into a bowl and mix.
- Drizzle with olive oil, and mix again.
- Season with salt & pepper.
