Ingredients

  • 2 Tbsp olive oil
  • 2 medium red onions
  • 2 garlic cloves
  • 1-2 Tbsp medium curry
    powder (or hot, if you like)
  • 1 tsp ground cumin
  • 225g Puy Lentils
  • Ca 450ml-500ml water
  • To serve: a punnet of cherry
    tomatoes, 1 Tbsp crème fraiche
    and some flat leaf parsley

    Lentils are a favourite of mine. They are rich in complex carbs, fibre and several minerals including iron. They basically provide bulk for little calories. When you cook Puy Lentils or Lentilles Verts (green lentils), they retain their bite. They can be enjoyed hot or cold. This makes them a perfect addition to soups and salads alike. I am heavily leaning on Linda McCartney’s version of curried lentils here …

    Curried Lentils

    Method

  • Finely chop the onions and garlic.
  • Heat the olive oil over medium heat, add onions and garlic and sweat, stirring often.
  • Add the curry powder and cumin, stirring to make sure they don’t burn. Now, add the lentils and about 450ml water, bring to the boil and allow to simmer for 20 minutes.
  • If too much water boils off, add a little more.
  • Season with salt and pepper.
  • When it’s ready to serve, briefly boil the halved cherry tomatoes in it. Place onto plates, garnish with crème fraiche and parsley. Enjoy!
