Bananas are the ultimate post-workout treat, a perfect blend of healthy carbs and potassium to re-energize yourself. Berries are jam packed with polyphenols which are strong antioxidants. I came across this idea of creating ice cream in my search for a sugar-free alternative to sorbet in local Dubliner Bernadette Bohan’s cook book “Raw”. Here, frozen bananas are used as the iced basis for a super berry ice cream. You just need a food processor and freezer.

Method
- Make the sauce by blitzing all ingredients together in a food processor. Set aside.
- Freeze 2 peeled bananas, cut into slices, ideally overnight. Once they are fully frozen solid, they’re good to use.
- In a food processor, mix the fresh berries, vanilla essence and banana slices.
- Serve with some chopped dark chocolate and mint leaves. Enjoy immediately.
Tip: You can add a dash of your favourite nut milk to make this into a softer ice cream. But don’t forget this will melt readily on your tongue once you are enjoying it. So go easy on the nut milk.
