Ingredients

  • 4 large chicken breasts, sliced
    into 2-3 smaller pieces each
  • 8 medium potatoes, washed
    and cut in half
  • 2-3 Tbsp of your favourite pesto
    (I love green pesto)
  • 10-12 cherry tomatoes, halved
  • 2 medium courgettes, cut
    into bite-size slices
  • Some olive oil to drizzle,
    salt and pepper to season

      This is one of my favourite midweek meals. It is quick to prepare, you literally just have to throw everything into the oven. It’s got a great balance of protein, complex carbs and fibre, and is loaded with nutrients. I make a choice of pesto or tomato chicken just to have some fun with the ingredients.

      Chicken with Tomatoes or Pesto and Potatoes

      Method

      • Preheat your oven to 200C.
      • Place the potatoes on an oven dish, cover with some oil and salt.
      • Place into the oven. Next, place the cut-up chicken breasts into an oven-proof dish, cover half of them with pesto, and the other half with the tomatoes.
      • Place into the oven.
      • Next, slice the courgettes and place on an oven-proof dish, I prefer to line this with parchment paper first.
      • Drizzle with a little olive oil and season with salt and pepper.
      • Place into the oven.
      • The chicken and courgette should be done within 15-20 minutes, the potatoes take another 10 minutes (which is why I place them in the oven first).
