A good breakfast will start you off right into your day. Try these quick options:

  • Overnight oats – simply pour 1 cup oats and 2 cups water/milk together and store in the fridge overnight. In the morning, top with goji berries, almonds, seeds and fresh berries or melon (can also be taken with you!).

  • Wholemeal or sourdough toast with scrambled or poached eggs, ½ avocado, peanut butter & jam, or honey.

  • Natural yoghurt topped with nuts & seeds, berries and golden flaxseed.

  • Porridge made fresh from porridge oats with half water/milk and fruit compote (leave frozen berries out the night before and quickly heat them over low heat in the morning).

Less Than 10-Minute Lunch Box

A healthy lunchbox requires a balance of complex carbs and proteins, fruit & some vegetables to cover all nutrients and to keep your child (or yourself) running full steam all day.

  • Wholemeal sandwich/wrap with chicken, cheese, ham, boiled egg, or hummus spread.

  • An apple or an orange, whole or sliced; or a banana.

  • One carrot cut into sticks, or pepper sticks.

  • 3-4 crackers or rice cakes with olives, butter or hummus.

  • Small pot of yoghurt, a mini muffin, or a small biscuit.

  • Bottle of fresh water.

Vary it up Hacks: leftover pasta salad, homemade egg muffins, cooled toasties, bacon and bun, mini sandwiches/wraps with chicken, or ham.

Less Than 30-Minute Dinners

Family-friendly and less than 30 minutes from start to finish. Pin these quick and nutritious dinner ideas to your phone or fridge as a reminder!

  • Spaghetti Bolognese – also great for batch cooking and freezing. Parents who are watching the carbs can make their own courgetti.

  • Stir fry – this takes less than 30 minutes! Get a bag from the supermarket and vary it up with chicken, beef, or prawns. Add a bit of rice.

  • Fresh or frozen oven baked fish, potato wedges and peas – once you have done your prep, you can even sit down while this bakes in the oven.

  • Curry – also great for batch cooking and freezing. Add lots of vegetables like baby corn, red and yellow peppers, mangetout, courgette, etc.

  • Homemade pizza – buy a quality fresh sourdough base, get the right ingredients, and have a fun family evening together making pizza. Make your own pizza sauce by adding mixed herbs (or just oregano) to a pack of tomato passata, a dash of olive oil, salt & pepper. Warm it through and spread on the base.

  • Homemade lasagna – “cheat” with ready-made bechamel sauce, but add lots of lovely veg like carrots, onions, celery or courgette to bulk it up. Mushrooms are great too. Also ideal for batch cooking and freezing.

  • Beef stew – a great warming family one-pot meal, especially for active children and teens. Can be made the night before and re-heated on demand.

  • Teriyaki Salmon – all you need is the teriyaki sauce to create a nutritious, tasty meal that pleases all. Serve with a mountain of green vegetables and rice.
